Today I’m sharing an easy broccoli and frittata recipe, which I love for breakfast, lunch or even dinner. With a side of veggies or salad, this protein-packed meal is very filling! It’s also a great way to use up eggs.
I used to have a mild allergy to eggs that my family refused to believe, so I was served eggs before every car ride and trip to amusement park. That always ended badly. Even once my allergy seemed to finally subside (guess my body wasn’t as stubborn as my family), it took me a long time to warm up to eggs cooked any other way other than into a cake. So when I tell you this frittata is delicious, believe me – because I genuinely don’t really like eggs.
Ingredients:
- 1 tablespoon unsalted butter
- 1/2 onion, finely diced (I use a mini food processor)
- 6 eggs
- 1 cup feta, cut into itty-bitty pieces
- 3.5 cups loosely packed, washed broccoli
- Salt & pepper (to taste)

Kitchen Accoutrements:

- Oven: set broiler on high
- Food processor (only if you like your onion diced really finely, like I do)
- Mixing bowl and whisk for whisking eggs
- Cast iron pan or any oven-safe pan that is non-stick
(My le creuset cast iron pan is 9.5″ and 2″ deep)
How to Make a Frittata:

- Melt the butter over medium heat
- Add the onion and cook until the onion is a bit glossy (3-5 minutes)
- (Be careful not to overcook because overcooked onion is bitter)
- Add the chopped broccoli to the pan
- Season with salt & pepper and stir
- Whisk eggs and pour over broccoli and onion
- Don’t stir, just lightly nudge the eggs over the broccoli and onion so the eggs have spread evenly
- The eggs will begin to set immediately, so quickly toss the feta on top but do not stir
- Cook over medium heat until the eggs are firm on the bottom, gently life with a spatula to take a peak (4-6 minutes)
- Place pan under the broiler for only a couple minutes (watch carefully because the eggs will brown quickly)

- 1/2 onion, finely diced
- 6 eggs
- 1 cup feta (cut into small pieces)
- 3.5 cups broccoli (washed and chopped)
- Salt and pepper to taste
Instructions
- Melt butter over medium heat in an oven proof pan (ex: cast iron)
- Add the onion and cook until the onion is a bit glossy (3-5 minutes)
- Add the chopped broccoli to the pan
- Season with salt and pepper, stirring gently
- Whisk eggs in a bowl and pour over the onion and broccoli
- The eggs will begin to set quickly
- Toss on the felt and do not stir
- Cook on medium heat, until the eggs are firm on the bottom (4-6 minutes)
- Gently lift with a spatula to take a peek
- Turn broiler on to high
- Place pan under broiler briefly (approx. 2 minutes)
- Watch carefully because the eggs will brown very quickly!
We actually had a nice, leisurely brunch not too long ago. We even used the dining room, something we typically only reserve for guests for some bizarre reason. A lot of my meals alone I’ve been gobbling while watching The Vampire Dairies, but even when we sit at a table, we usually sit in the kitchen. I don’t know why, our dining room is lovely, with big windows and a pretty view.

Vampire Diaries is stupidly addictive, isn't it? Although I feel a bit weird about approaching 30 (slowly) and watching a bunch of high schoolers flit about and moon over each other.
I tried to not watch VD for the longest time, but then finally caved and got hooked. I'm pretty sure I'm going to be on my death bed and still be watching teen shows! One can only take so much blood and gore from procedurals and medical shows. (ha, not that VD doesn't have that…)
Yep, it is much easier to give in and just watch the show. I figure there are worse addictions . . .
This all sounds great. I may need to sneak in a breakfast for dinner sometime in the near future!

I widened my whole blog and to keep the photos crisp I've kept them original size (instead of sm, m, l, xl). I've found the bigger I keep them, the clearer they are once blogger morphs them into a blog post. Sorry they're so huge for you!
I just checked in google reader (I never use that) and they ARE giant. Haha. You can see how dirty my stove element is. But oddly, even though they are all the same size, only some pop up giant. Google: are you trying to drive me insane?!? Work with me, google/blogger, work with me.

Lol! My guy won't consider this dinner either – he would ask where the meat was and tell me it needs to be at least twice this size! Luckily he is out and about this evening so I am going to give this a try! It looks scrumptious!
